Last week of Alison April! I hope you have been enjoying cooking through "Nothing Fancy" with me this month. I am interested to know what everyone's favorite meals where? Main dish wise, my favorite dish was the ricotta stuffed shells. Side dish wise, the smashed sweet potatoes were also up there. Overall, I have come to really appreciate Alison's eloquent prose in her writing style as well as the combos of ingredients that create something super flavorful out of the seemingly simple. I found myself continuously thinking "how does THIS taste so good"? I am excited to end on a bang this week and moved into Molly May where we will be cooking Molly Baz's sophomore cookbook, "More is More". Feel free to snag it here if you'd like!

Lemony Turmeric Tea Cake
1.5 sticks unsalted butter
1.5 lbs shredded mozzarella
16 oz whole-milk ricotta
1 cup grated parm
.25 cup heavy cream
3/4 cup sour cream or full-fat greem yogurt
2 large eggs
6 lemons
5 garlic clove
4-6 heads of little gem lettuce or 1 large head of romaine or iceberg
.5 cup parsley
.5 cup chives
1.25 cup dill
1 bunch chard
1 preserved lemon
1 cup cilantro
1/2 small red onion
1 large yellow onion
2 lbs boneless pork shoulder
2 lb salmon fillet

.5 cup raw pistachios, almonds, or walnuts
.5 cup harissa paste
.25 cup white vin
5 tbs tomato paste
3 tbs brown sugar
2 (15 oz) cans white beans
2 tbs brined capers
2 tbs sesame seeds
6 anchovy fillets (optional)
1 (28 oz) can whole peeled tomatoes
1 (28 oz) can crushed tomatoes
1 lb dried lasagna noodles
1.5 cups all purpose flour ( or gf 1:1 flour)
2 tsps baking powder
3/4 tsp turmeric

Buttered Salmon w/ Red Onions & Dill - 8/10
You can't beat an oven baked salmon
Solid staple meal and I loved the use of caper and red onion
Little Gems w/ Garlicky Lemon & Pistachio - 7/10
Couldn't find little gem lettuce so I used iceberg, but I think a softer lettuce like romaine would have been better

A Very Good Lasagna - 9/10
Best meal of the week! A super simple, traditional lasagna
