I'm going to keep the Molly train rolling this week if thats okay with you! Trent (the S.O.) has requested that we throw it back to some of our favorite recipes from Cook This Book. This cookbook has so many staple week night recipes that you keep wanting to come back to. I tend to be a very literal person so I took the name "cook this book" to be a challenge to literally cook the whole book. I would say I am ~90% there?? This cookbook is also where I first started rating recipes and giving myself permission to write in my cookbooks, making notes on ingredients, things that I loved or could do better next time. It made the cooking process way more interactive and was a fun way to get my dinner guests in on it by asking for their rating of the recipe after a meal. If you weren't giving yourself permission before, try writing in your cookbooks - they are meant to be man handled (respectfully) and get a few food stains in them!

Peach & Tomato Salad w/ Sizzled Halloumi
I make mine w/out peaches but you do you!
1 can full fat coconut milk
eggs
8 oz halloumi or grilling cheese
Parmesan cheese
1.75 cups plain whole milk yogurt
1 piece fresh ginger
23 cloves garlic (~ 3 heads)
3 bunches basil
2 limes
3.5 lbs cherry or sungold tomatoes
2 red onions
3 lemons
1 bunch cilantro
1 ripe tomato
1 lb heirloom or ripe tomatoes
1.5 lbs shrimp (peeled, deveined)
2 lbs boneless chicken thighs (~6)
sambal
honey
shredded coconut
2 cans chickpeas
vegetable oil
1 lb dried pasta (spaghetti is my fave)
white vinegar
sugar
paprika
cumin
cinammon
cayenne pepper
black olives
mayo
1 can tuna
potato chips
mustard seeds
pitas
sandwich bread of choice

Spiced, Grilled & Swaddled Chicken Thighs w/ the Works - 10/10
This one deserves a full table spread - simple but filling, healthy and flavorful
Would make for really good lunch meal prep for the week

My gluten free noodles broke but the flavors are outstanding on this dish
I like to emulsify the sauce to get a smoother texture
Tomato Salad w/ Sizzled Halloumi - 7/10
Love this a a snack, side, or non-salady salad to go with a main
Made at the beginning of the week and would whip it out to snack on throughout the week
Nicoise Sandos - didn't get to making this one this week! We had enough food on hand, so we will bump this to next week!
