The last week of March means one more week of Cook This Book recipes before we move on to a new cookbook for the month of April! Maybe you are sick of my obsession with Molly Baz at this point or maybe you're just getting started "cooking the book" and aren't ready to move on! I could cook Molly every night of the week but will move on next month for those of you that are begging me to mix it up.
I am allowing myself to splurge a bit more this week - pork shoulder is a not as common a cut of meat. If it is too pricy or hard to find, you can swap it for pork butt which is usually cheaper but harder to handle if it has a bone-in. Also, we have two meals that call for two different types of fresh cheeses (burrata & mozz), which also aren't on the cheaper side. These three items are making up the bulk of the grocery bill (plus the fresh deli lunch meat and cheese Trent requested this week = ~$24 total in my grocery total below). The good news is all of these dinners make A LOT and leftovers are a guarantee!

Pasta Salad w/ Morty-d, Mozz & Pistachios
One-Pot Chicken & Schmaltzy Rice w/ Lemony Yog

Grapefruit Burrata Salad w/ Chile Crisp
2 tbs unsalted butter
1 cup plain whole-milk yogurt
.5 cup grates parmesan
12 oz fresh mozzarella
8 oz burrata
1 large white or yellow onion
11 garlic cloves
4 lemons
4 oz sugar snap peas
1 bunch cilantro
2 cup basil leaves
1 english cucumber
2 shallots
2 grapefruit
10 celery stalks
1 granny smith apple
2 lbs bone-in, skin-on chicken thighs
8 oz mortadella
2 pork shoulder steaks (~2.5 lbs)
1.5 cups basmati rice
salt
pepper
olive oil
1.5 cups roasted, salted pistachios
1.5 cup castelvetrano olives
1 lb dried rigatoni
.5 cup while miso paste
3 tbs + 2 tsp sugar
5 tbs rice vinegar
2.75 tsp red pepper flakes
1 cinnamon stick
1 tsp honey
.75 cup roasted peanuts
8 medjool dates
crusty bread

This is a fave in our house - great dinner that keeps well and makes great lunch leftovers
You could easily do this meatless or swap in salami, etc.

10 in flavor, but definitely on the lighter side in terms of being filling

Heavy on the garlic so feel free to dial it down if 7 cloves gives you heartburn
