At this point I think we are just highlighting Cook This Book for the entire month of March and that may just be the game plan going forward so there's not a ton of flip flopping between cookbooks for those of you on this journey with me. I like consistency and planning, but if that's not your jam and you like to mix it up - do your thing! These menus are meant to be an inspiration for your weekly meal planning, so take what you like - leave what you don't!
I didn't get to cooking the Milk Braised Chicken recipe last week, so that one is carrying over for me this week. I would challenge you to go off script and choose another recipe to replace that one if you already cooked it last week. Let me know what recipe you pick, what you would rate it and what went well/could have been better! Another good practice is to use ingredients you already have in your fridge to cut down on grocery bills and excess food -> for example, I have a lot of celery left over from the Peanutty Pork Noods, but I can use that in the Beef & Celery Stir Fry!

Milk Braised Chicken w/ Bacon, Beans, & Kale - 7/10
Really yummy comfort meal, makes alot of food!
Added rice to the base to make it more hearty
Excuse my terrible pic - the crispy skin on my chicken fell off
Tomato Toast w/ Cheddar & Smoky Mayo - 10/10
I love tomato toast and this one is top tier
Great lunch or snack and comes together really easy
The smoky mayo by itself may have to be a condiment staple in my fridge
Black Sesame Shortbread - 8/10
Made these w/ GF 1:1 flour and they turned out great
Really quick and easy to make - no messy clean up!
Fun snack throughout the week
Party Nutz - 8/10
Easy, spicy, salty roasted nut mix
Trent & I are constantly grabbing handfuls of this stuff - it's addicting
Would be an easy/cheap snack to have on hand in the pantry if you have random nuts to use up
I buy nuts from the bulk section of the grocery store for recipes & it is way cheaper
Beef & Celery Stir Fry w/ Wilted Basil - 8/10
Trent gave this one a 10/10 so he may fight me - I would make it a little saucier next time!
The beef alone is incredible and gets nicely carmelized & cripsy on the outside, while staying tender
VERY SPICY - if you aren't into spice cut the fresno/serrano
Napa Cabbage Salad w/ Shredded Chicken, Cotija, & Corn Nuts - 8/10
Great lunch or light dinner, easy & quick to prepare
You can use fritos or corn nuts depending on whats cheaper or avialable
