Continuing on this week with some Cook This Book favorites! I love that there are so many recipes in this book because by the time you come back around to re-cooking one it feels fresh. When picking dinner recipes, I try to throw in a variety of meat, non-meat, or seafood options, but if you have the cookbook feel free to swap out any recipes or ingredients that don't meet your dietary preferences. For me personally, I am allergic to gluten, so I am making substitutions to most recipes to make it gluten free! Some examples: gf pasta instead of wheat pasta, tamari instead of soy sauce, gf flour instead of wheat flour, etc.

2.5 cups whole milk
.5 cup full-fat cottage cheese
11 garlic cloves + 1 whole head of garlic
2 in. piece fresh ginger
4 celery stalks
3 lemons
3 sage sprigs
2 bunches lacinato kale
4 small sweet potatoes
2 limes
1 hothouse cucumber
3 romain hearts or 4 little gem
1 lb ground pork
1.5 lb salmon fillet
1 package thick-cut bacon
4 bone-in, skin-on chicken leg quarters or 6 thighs (~2.5 lbs)
.5 cup crunchy peanut butter
.25 cup low sodium soy sauce / tamari (gf)
.25 cup rice wine vinegar
3 tbs sriracha
3 tbs honey
2 tbs vegetabel oil
1 lb fresh pasta / gf pasta

Super low effort for high amount of flavor!
Added cilantro rice as a base to make it a more substantial/full meal
Used salt and pepper chips to add more flavor!
Giving it a 7 bc I would like to lower the salt levels next time (blasphemous I know!!!)
Sweetie P's w/ Peanut Chili Salsa - 10/10
Easy 10/10 - the sweet potato gets caramelized and soft, but crispy, and the peanuts add a good crunchy texture to offset the mush, plus the spice of the chili oil and the tang/freshness of the lime.... the flavor profile is unmatched
Literally want to have these in the fridge every week - they keep really well for leftovers and I've been putting the salsa on other dishes all week
Sneaky Cottage Cheese Salad - 8/10
Super refreshing and the cottage cheese is actually quite sneaky and good!
Best eaten fresh and sadly doesn't keep super well as leftovers but I still ate it the next day!
Peanutty Pork Noodles w/ Crunchy Celery - 8/10
Very filling and makes a lot! Great for leftovers throughout the week.
Don't skip out on the fresh pasta - IMO this makes all the difference!
The Nicoise Sandos & Milk Braised Chicken didn't make it into the rotation this week - that's okay and just means I already have a meal for this next week! So in a way I am saving on groceries if my girl math is correct....
